Cooking in the coals

We’ve been blessed with such stunning weather this month, the perfect excuse for inviting friends over for a BBQ – or the local equivalent! Unfortunately we don’t have any outdoor living space, but we are happily accepting invitations.  Last week it was lunch with a Kosovo twist…

Cooking under these coals is a pancake style of pita/pie, known as ‘flija’.  The flija is slowly built up as layers of mix are added to the hot plate and cooked in the fire.

The completed flija is cut and served with a mix of salads, pickles, some delicious feta cheese and some of your more typical BBQ offerings;

I was too busy eating to take a photo of the fully loaded table! It was a delicious lunch in the sun with some lovely friends, perfect!
